Kale, the Sequel

When you finally take that one step into the abyss of needing to find ways to incorporate greens into each wintery day, you know you’re hooked.  I confess, I’m now easily reeled in by the prospect of making them part of my meals.

There are so many wonderful ways to fall in love with winter greens.So, tonight in less than 15 minutes, I threw together a sweet little omelet with kale and onions.

Parsnip greens lurk in the frig (along with the vegetable itself), but that’s fodder for tomorrow.
